A festive dinner to celebrate New Year’s Eve with family and friends.
Ingredients

- 2 lbs roast beef
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 cups green beans
- 1 cup cherry tomatoes
- 1 tbsp balsamic vinegar
- 1 loaf of French bread
- 1 bottle of red wine
Instructions
- Preheat the oven to 375°F.
- Rub the roast beef with garlic, olive oil, salt, and pepper.
- Place the roast in a baking dish.
- Roast in the oven for 1.5 hours or until desired doneness.
- In the meantime, sauté green beans and cherry tomatoes.
- Drizzle with balsamic vinegar and cook for 5 minutes.
- Slice the roast beef and serve with vegetables.
- Pair with French bread and red wine.
