Instructions

  3. Bring to a boil, then reduce heat and cover.
  4. Cook for 15 minutes or until liquid is absorbed.
  5. Fluff quinoa with a fork and let it cool.
  6. In a bowl, mix black beans, red bell pepper, avocado, lime juice, and cilantro.
  7. Add quinoa to the mixture and stir well.
  8. Season with salt and pepper to taste.
