Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, salt, pepper, and rosemary.
  3. Place the tenderloin in a baking dish.
  4. In a separate pot, boil the potatoes until tender, then drain.
  5. Add butter to the potatoes and mash until smooth.
  6. On a baking sheet, arrange the asparagus and drizzle with lemon juice.
  7. Roast the beef and asparagus in the oven for 20-25 minutes.
  8. Let the beef rest for 10 minutes before slicing.
  9. Serve with mashed potatoes and roasted asparagus.
