Ingredients
- Mini puff pastry sheets – 1 package
- Cheese (cheddar or mozzarella) – 2 cups, shredded
- Spinach – 1 cup, chopped
- Mushrooms – 1 cup, diced
- Olive oil – 2 tablespoons
- Garlic – 2 cloves, minced
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat.
- Add garlic and mushrooms, sauté until tender.
- Add spinach, salt, and pepper; cook until spinach wilts.
- Roll out puff pastry and cut into small squares.
- Place a spoonful of the filling on each square.
- Top with shredded cheese.
- Fold the pastry over and seal the edges.
- Place on a baking sheet and bake for 15-20 minutes or until golden.
- Serve warm.
