Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- Let quinoa cool.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Serve chilled or at room temperature.
