Instructions

  1. Rinse black-eyed peas under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, bell pepper, and garlic. Sauté until soft.
  4. Add black-eyed peas, water, bay leaf, salt, pepper, and paprika.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Remove bay leaf and serve hot.
