- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 4 (8-ounce) packages cream cheese, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Add sugar and mix until combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and lemon juice.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 60-70 minutes, or until set. Turn off the oven and let the cheesecake cool inside for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours before serving.
Notes
- Use room temperature cream cheese for a smoother filling.
- Do not overmix the batter to avoid cracks.
- For best flavor, let the cheesecake chill overnight.
