Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese until smooth. Add sugar and mix until combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and lemon juice.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 60-70 minutes, or until set. Turn off the oven and let the cheesecake cool inside for 1 hour.
  8. Remove from the oven and refrigerate for at least 4 hours before serving.
