Description

A rich and creamy no-bake cheesecake flavored with Biscoff cookies.


Ingredients

Scale
  • 250g Biscoff cookies
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 200g powdered sugar
  • 300ml heavy cream
  • 1 tsp vanilla extract
  • 50g Biscoff spread

Instructions

  1. Crush the Biscoff cookies into fine crumbs.
  2. Mix the crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to create the crust.
  4. In a bowl, beat the cream cheese and powdered sugar until smooth.
  5. Add the heavy cream and vanilla extract, and whip until it forms stiff peaks.
  6. Gently fold in the Biscoff spread until fully incorporated.
  7. Pour the cheesecake filling over the crust and smooth the top.
  8. Chill in the refrigerator for at least 4 hours, or until set.
  9. Remove from the springform pan and serve chilled.

Notes

  • For a stronger Biscoff flavor, increase the amount of Biscoff spread.
  • You can garnish with crushed Biscoff cookies or a drizzle of Biscoff spread.
  • This cheesecake can be made a day in advance for better flavor development.
