Instructions
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and lemon juice to the cream cheese mixture, mixing until incorporated.
- In a small bowl, dissolve gelatin in warm water and let it cool slightly.
- Slowly mix the gelatin into the cream cheese mixture.
- In another bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture until fully combined.
- Stir in the strawberry puree until evenly distributed.
- Pour the cheesecake filling over the crust in the springform pan.
- Refrigerate for at least 4 hours or until set.
- Garnish with fresh strawberries before serving.
Notes
- For a firmer cheesecake, increase gelatin by 1 teaspoon.
- Use a food processor for smoother crust and filling.
- Top with additional strawberry puree or a berry compote for extra flavor.
