Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth

  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion, bell pepper, and garlic. Sauté until tender.
  4. Add rice and stir for 2 minutes.
  5. Pour in chicken broth and season with paprika, salt, and pepper.
  6. Place chicken breasts on top of the rice mixture.
  7. Cover the skillet with a lid or foil.
  8. Bake for 45 minutes or until chicken is cooked through.
  9. Fluff rice with a fork before serving.
