Ingredients

- 2 lbs beef tenderloin
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup red wine
- 2 cups assorted vegetables (carrots, asparagus, potatoes)
Instructions
- Preheat the oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the beef in a roasting pan.
- Roast in the oven for 25-30 minutes for medium-rare.
- While the beef cooks, prepare vegetables by tossing them with olive oil, salt, and pepper.
- Add vegetables to the roasting pan during the last 15 minutes of cooking.
- Remove the beef from the oven and let it rest for 10 minutes.
- In the same pan, add red wine and scrape the bottom to deglaze.
- Slice the beef and serve with roasted vegetables and sauce.
