Description

A delicious meal perfect for New Year’s Eve celebrations.


Ingredients

  • 2 lbs beef tenderloin
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup red wine
  • 2 cups assorted vegetables (carrots, asparagus, potatoes)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the beef in a roasting pan.
  4. Roast in the oven for 25-30 minutes for medium-rare.
  5. While the beef cooks, prepare vegetables by tossing them with olive oil, salt, and pepper.
  6. Add vegetables to the roasting pan during the last 15 minutes of cooking.
  7. Remove the beef from the oven and let it rest for 10 minutes.
  8. In the same pan, add red wine and scrape the bottom to deglaze.
  9. Slice the beef and serve with roasted vegetables and sauce.
