Ingredients

- 2 lbs beef tenderloin
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp rosemary, chopped
- 2 cups green beans, trimmed
- 1 lb potatoes, cubed
- 2 tbsp butter
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 400°F.
- Rub the beef with garlic, olive oil, salt, pepper, and rosemary.
- Place the beef in a roasting pan and roast for 25-30 minutes.
- Meanwhile, boil the potatoes until tender, then drain.
- In a pot, combine potatoes, butter, and cream. Mash until smooth.
- Steam the green beans for 5 minutes.
- Let the beef rest for 10 minutes before slicing.
- Serve beef with mashed potatoes and green beans.
