Ingredients

  • 2 tbsp butter
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 400°F.
  2. Rub the beef with garlic, olive oil, salt, pepper, and rosemary.
  3. Place the beef in a roasting pan and roast for 25-30 minutes.
  4. Meanwhile, boil the potatoes until tender, then drain.
  5. In a pot, combine potatoes, butter, and cream. Mash until smooth.
  6. Steam the green beans for 5 minutes.
  7. Let the beef rest for 10 minutes before slicing.
  8. Serve beef with mashed potatoes and green beans.
