Instructions
- Preheat the oven to 400°F (200°C).
- Toss shrimp with olive oil, garlic powder, and paprika. Bake for 10-12 minutes.
- Cook quinoa in vegetable broth according to package instructions.
- Chop vegetables and arrange on a platter with hummus.
- Squeeze lemon juice over cooked quinoa and mix in fresh herbs.
