Description
Classic old fashioned potato salad with a creamy dressing.
Ingredients

- 4 large potatoes, peeled and diced
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 cup celery, chopped
- 1 cup onion, finely chopped
- 3 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil potatoes in salted water until tender.
- Drain and let cool.
- In a bowl, mix mayonnaise, vinegar, and mustard.
- Add celery, onion, and eggs to the dressing.
- Add cooled potatoes and mix gently.
- Season with salt and pepper.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For added flavor, include chopped pickles or relish.
