A simple and flavorful one pot beef taco pasta dish.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 3 cups pasta (penne or rotini)
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. Stir in taco seasoning and cook for another minute.
  4. Add the pasta, beef broth, diced tomatoes, and corn. Bring to a boil.
  5. Reduce heat and simmer for about 10-12 minutes or until pasta is cooked.
  6. Stir in the shredded cheese until melted and creamy.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy.
