A simple and delicious one pot chicken piccata recipe.
Ingredients

- 2 boneless chicken breasts
- 1 cup flour
- 1/4 cup olive oil
- 1/4 cup butter
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1/4 cup capers
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped
Instructions
- Flatten chicken breasts to even thickness.
- Season flour with salt and pepper. Dredge chicken in flour.
- Heat olive oil and butter in a large skillet over medium heat.
- Cook chicken until golden brown on both sides, about 6-7 minutes per side.
- Remove chicken and set aside.
- Add garlic to the skillet and sauté for 1 minute.
- Pour in chicken broth and lemon juice, scraping the bottom of the skillet.
- Add capers and return chicken to the skillet.
- Simmer for 5-10 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- Serve over pasta or rice for a complete meal.
- Adjust lemon juice to taste.
- Store leftovers in the refrigerator.
