A simple and delicious one pot chicken piccata recipe.


Ingredients

  • 2 boneless chicken breasts
  • 1 cup flour
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup capers
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Flatten chicken breasts to even thickness.
  2. Season flour with salt and pepper. Dredge chicken in flour.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Cook chicken until golden brown on both sides, about 6-7 minutes per side.
  5. Remove chicken and set aside.
  6. Add garlic to the skillet and sauté for 1 minute.
  7. Pour in chicken broth and lemon juice, scraping the bottom of the skillet.
  8. Add capers and return chicken to the skillet.
  9. Simmer for 5-10 minutes until chicken is cooked through.
  10. Garnish with fresh parsley before serving.

  • Serve over pasta or rice for a complete meal.
  • Adjust lemon juice to taste.
