Ingredients

- 4 chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Season chicken thighs with salt, pepper, thyme, rosemary, and garlic powder.
- Brown chicken thighs in the pot for about 5 minutes on each side.
- Add rice, chicken broth, lemon juice, and lemon zest to the pot.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until rice is cooked and liquid is absorbed.
- Let it rest for 5 minutes, then fluff with a fork.
- Garnish with fresh parsley before serving.

- Use bone-in chicken for more flavor.
