Ingredients

- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cook for 5-7 minutes until heated through.
- Sprinkle shredded cheese on top and cover the pot.
- Cook for an additional 2-3 minutes until cheese melts.
Notes
- This dish can be customized with your favorite vegetables.
- Add jalapeños for extra heat.
- Serve with avocado or sour cream on top.
