A simple and delicious one pot spinach and artichoke pasta dish.
Ingredients

- 8 oz pasta
- 1 can artichoke hearts, drained and chopped
- 2 cups fresh spinach
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, combine pasta, artichoke hearts, spinach, vegetable broth, and garlic.
- Bring to a boil over medium-high heat.
- Reduce heat and simmer for 10-12 minutes, stirring occasionally.
- Add heavy cream and Parmesan cheese to the pot.
- Stir until cheese melts and sauce thickens.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- Use any pasta shape you prefer.
- For a vegan version, substitute heavy cream and cheese with plant-based alternatives.
- Leftovers can be stored in the fridge for up to 3 days.
