A simple and delicious one pot spinach and artichoke pasta dish.


Ingredients

  • 8 oz pasta
  • 1 can artichoke hearts, drained and chopped
  • 2 cups fresh spinach
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, combine pasta, artichoke hearts, spinach, vegetable broth, and garlic.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat and simmer for 10-12 minutes, stirring occasionally.
  4. Add heavy cream and Parmesan cheese to the pot.
  5. Stir until cheese melts and sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve warm.
