A refreshing orzo salad perfect for any occasion.
Ingredients

- 1 cup orzo pasta
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the orzo pasta in boiling water for 8-10 minutes until al dente.
- Drain and rinse with cold water.
- In a large bowl, combine the orzo, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or olives.
- Can be made a day ahead.
- Best served cold.
