Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta in boiling water for 8-10 minutes until al dente.
  2. Drain and rinse with cold water.
  3. In a large bowl, combine the orzo, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for 30 minutes before serving.
