A savory and hearty oxtail stew.
Ingredients

- 2 pounds oxtail
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Season oxtail with salt and pepper, then brown on all sides.
- Add onions, carrots, and garlic; sauté until softened.
- Stir in beef broth, diced tomatoes, tomato paste, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 3 hours.
- Remove bay leaf and serve hot.
Notes
- Serve with rice or bread.
- Leftovers can be refrigerated for up to 3 days.
