  • 2 large eggs
  • 1/2 cup peach puree
  • 1/4 cup prosecco or sparkling wine
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for frosting)
  • 1 tablespoon prosecco (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the peach puree and vanilla extract.
  5. In another bowl, combine flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with prosecco.
  7. Fill each cupcake liner about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool completely before frosting.
  10. For frosting, mix powdered sugar with prosecco until smooth and creamy, then frost the cooled cupcakes.
