Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the peach puree and vanilla extract.
- In another bowl, combine flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with prosecco.
- Fill each cupcake liner about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool completely before frosting.
- For frosting, mix powdered sugar with prosecco until smooth and creamy, then frost the cooled cupcakes.
Notes
- Use fresh peaches for better flavor.
- Store cupcakes in an airtight container.
- Frosting can be adjusted for sweetness.
