Delicious peanut butter filled brownie cookies that combine rich chocolate and creamy peanut butter.

- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup creamy peanut butter
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix melted butter and granulated sugar until smooth.
- Add eggs and vanilla extract; mix well.
- In another bowl, combine flour, cocoa powder, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture; stir until combined.
- In a separate bowl, mix peanut butter and powdered sugar until smooth.
- Drop a spoonful of brownie batter on a baking sheet.
- Add a small dollop of the peanut butter mixture on top.
- Cover with another spoonful of brownie batter.
- Bake for 12-15 minutes or until set.
Notes
- Let cookies cool before serving.
- Store in an airtight container.
- For extra flavor, add chocolate chips to the brownie batter.
