Instructions

  1. Cook the rice noodles according to package instructions.

  3. Add garlic and ginger, sauté for 1 minute.
  4. Add bell peppers, carrots, and broccoli; stir-fry for 5 minutes.
  5. In a bowl, mix soy sauce, peanut butter, and lime juice.
  6. Add cooked noodles to the pan, pour the sauce over, and toss everything together.
  7. Cook for another 2-3 minutes until heated through.
