Ingredients

- 8 oz rice noodles
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 1/2 cup green onions, chopped
- 1/2 cup peanuts, crushed
- 3 tbsp soy sauce
- 2 tbsp peanut butter
- 1 tbsp sesame oil
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tbsp lime juice
Instructions
- Cook the rice noodles according to package instructions.
- In a large pan, heat sesame oil over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add bell peppers, carrots, and broccoli; stir-fry for 5 minutes.
- In a bowl, mix soy sauce, peanut butter, and lime juice.
- Add cooked noodles to the pan, pour the sauce over, and toss everything together.
- Cook for another 2-3 minutes until heated through.
- Garnish with crushed peanuts and green onions before serving.
Notes
- Adjust the amount of peanut butter for a thicker sauce.
- Add protein like tofu or chicken for a complete meal.
- Serve with lime wedges for extra flavor.
