Ingredients

  • 1/2 cup dry white wine
  • 8 cups beef broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme
  • 1 baguette, sliced
  • 2 cups grated Gruyère cheese

Instructions

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add onions, sugar, salt, and pepper. Cook until onions are caramelized, about 30 minutes.
  3. Pour in white wine and cook until reduced by half.
  4. Add beef broth, bay leaf, and thyme. Simmer for 30 minutes.
  5. Preheat oven to broil.
  6. Place soup in oven-safe bowls. Top with baguette slices and sprinkle cheese on top.
  7. Broil until cheese is bubbly and golden, about 5 minutes.
