A classic French onion soup with rich flavors and a cheesy topping.
Ingredients

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dry white wine
- 8 cups beef broth
- 1 bay leaf
- 1 teaspoon fresh thyme
- 1 baguette, sliced
- 2 cups grated Gruyère cheese
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add onions, sugar, salt, and pepper. Cook until onions are caramelized, about 30 minutes.
- Pour in white wine and cook until reduced by half.
- Add beef broth, bay leaf, and thyme. Simmer for 30 minutes.
- Preheat oven to broil.
- Place soup in oven-safe bowls. Top with baguette slices and sprinkle cheese on top.
- Broil until cheese is bubbly and golden, about 5 minutes.
Notes
- Store leftovers in the fridge for up to 3 days.
- Reheat in the oven for the best texture.
- Use low-sodium broth if preferred.
