- 1 onion, quartered
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Rub olive oil all over the chicken.
- Season the chicken generously with salt and pepper.
- Stuff the cavity with lemon halves, garlic, and thyme.
- Place the onion quarters in the roasting pan.
