A flavorful Peruvian grilled chicken recipe with a zesty marinade.
Ingredients
Scale
- 1 whole chicken, cut into pieces
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 4 cloves garlic, minced
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon oregano
- Salt and pepper to taste
- Juice of 2 limes
Instructions
- In a bowl, mix olive oil, soy sauce, vinegar, garlic, paprika, cumin, oregano, lime juice, salt, and pepper.
- Add chicken pieces to the marinade and coat well.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat grill to medium-high heat.
- Remove chicken from marinade and discard the marinade.
- Grill chicken for about 15-20 minutes per side or until fully cooked.
- Let chicken rest for 5 minutes before serving.
Notes
- Serve with rice and salad.
- Adjust spices to your taste.
- Leftover chicken can be used in sandwiches or salads.
