Description

A hearty and delicious soup inspired by the classic Philly cheesesteak sandwich.


Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 8 oz provolone cheese, shredded

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and bell pepper; sauté until softened.
  3. Add garlic and cook for 1 minute.
  4. Add ribeye steak and cook until browned.
  5. Pour in beef broth and Worcestershire sauce; bring to a boil.
  6. Reduce heat and stir in heavy cream.
  7. Season with salt and pepper.
  8. Stir in provolone cheese until melted.
  9. Serve hot.

Notes

  • For a thicker soup, blend a portion of it and return to the pot.
  • Top with extra cheese or croutons if desired.
  • Use leftover steak for quicker preparation.
