- 1 cup heavy cream
- 1 cup coconut milk
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
Instructions
- Blend pineapple chunks until smooth.
- In a bowl, mix cream, coconut milk, sugar, vanilla, and lime juice.
- Stir in the blended pineapple.
- Pour the mixture into an ice cream maker.
- Churn according to the manufacturer’s instructions.
- Transfer to a container and freeze for at least 4 hours.
Notes
- Use ripe pineapples for the best flavor.
- For a richer taste, add more coconut milk.
- Let the ice cream sit at room temperature for a few minutes before serving.
