Delicious porcupine meatballs made with rice and ground meat.
Ingredients

- 1 pound ground beef
- 1 cup cooked rice
- 1/2 cup onion, chopped
- 1/4 cup green bell pepper, chopped
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 can (15 oz) tomato sauce
- 1 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine ground beef, cooked rice, onion, bell pepper, egg, salt, pepper, and garlic powder.
- Shape the mixture into meatballs.
- Place meatballs in a baking dish.
- In a separate bowl, mix tomato sauce and water, then pour over meatballs.
- Bake for 30-40 minutes until cooked through.
Notes
- Serve with spaghetti or on a sub roll.
- Store leftovers in the fridge for up to 3 days.
- You can freeze meatballs before baking for later use.
