Pork chops in apple cider sauce with herb roasted potatoes


Ingredients

  • 4 bone-in pork chops, 1 inch thick
  • 1 cup apple cider
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 2 pounds baby potatoes, halved
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season the pork chops with salt and pepper.
  3. In a skillet, heat olive oil over medium-high heat. Sear the pork chops for 4-5 minutes on each side until browned.
  4. Remove the chops and set aside. In the same skillet, add garlic and cook for 30 seconds.
  5. Stir in apple cider and Dijon mustard, scraping the bottom of the skillet to deglaze.
  6. Return the pork chops to the skillet, and simmer for 10 minutes, basting occasionally.
  7. Meanwhile, in a bowl, toss the halved potatoes with olive oil, thyme, rosemary, salt, and pepper.
  8. Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until golden brown.
  9. Finish the pork chops in the oven for an additional 5-10 minutes, or until the internal temperature reaches 145°F (63°C).
  10. Serve the pork chops drizzled with apple cider sauce alongside the herb roasted potatoes.

Notes

  • Let the pork chops rest for 5 minutes before serving.
  • For a thicker sauce, reduce the apple cider longer on the stove.
  • Consider adding sautéed apples for added sweetness.
