Pork chops in apple cider sauce with herb roasted potatoes
Ingredients

- 4 bone-in pork chops, 1 inch thick
- 1 cup apple cider
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh rosemary, chopped
- Salt and pepper to taste
- 2 pounds baby potatoes, halved
- 2 tablespoons butter
Instructions
- Preheat your oven to 425°F (220°C).
- Season the pork chops with salt and pepper.
- In a skillet, heat olive oil over medium-high heat. Sear the pork chops for 4-5 minutes on each side until browned.
- Remove the chops and set aside. In the same skillet, add garlic and cook for 30 seconds.
- Stir in apple cider and Dijon mustard, scraping the bottom of the skillet to deglaze.
- Return the pork chops to the skillet, and simmer for 10 minutes, basting occasionally.
- Meanwhile, in a bowl, toss the halved potatoes with olive oil, thyme, rosemary, salt, and pepper.
- Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until golden brown.
- Finish the pork chops in the oven for an additional 5-10 minutes, or until the internal temperature reaches 145°F (63°C).
- Serve the pork chops drizzled with apple cider sauce alongside the herb roasted potatoes.
Notes
- Let the pork chops rest for 5 minutes before serving.
- For a thicker sauce, reduce the apple cider longer on the stove.
- Consider adding sautéed apples for added sweetness.
