Ingredients

- 1 prime rib roast (about 5–7 pounds)
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (230°C).
- Rub the prime rib roast with olive oil.
- Season the roast with salt, pepper, garlic, rosemary, and thyme.
- Place the roast in a roasting pan, bone side down.
- Roast in the preheated oven for 20 minutes.
- Reduce the temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until desired doneness.
- Remove from the oven and let it rest for 20-30 minutes before slicing.
Notes
- Use a meat thermometer to check the internal temperature.
- Medium-rare is about 130-135°F (54-57°C).
- Adjust cooking time based on the roast size and your preferred doneness.
