  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 500°F (260°C).
  2. Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the roast in a roasting pan bone-side down.
  4. Roast in the oven for 20 minutes.
  5. Reduce the temperature to 325°F (163°C) and continue roasting for about 1.5-2 hours.
  6. Check the internal temperature; it should reach 130°F (54°C) for medium-rare.
  7. Remove from the oven and let it rest for 20 minutes before slicing.
