Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the roast in a roasting pan with the bone side down.
- Roast for 20 minutes at 450°F to create a crust.
- Reduce the oven temperature to 325°F (163°C) and continue roasting.
- Cook until the internal temperature reaches your desired doneness (125°F for rare, 135°F for medium rare).
- Remove from the oven and let it rest for 20 minutes before slicing.
