Ingredients

- 1 prime rib roast (5–7 pounds)
- 3 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the prime rib roast with olive oil.
- Season with salt, pepper, garlic, rosemary, and thyme.
- Place the roast bone-side down in a roasting pan.
- Roast in the oven for 15 minutes.
- Reduce the temperature to 325°F (163°C) and continue roasting for 1.5 to 2 hours.
- Check the internal temperature, aiming for 130°F (54°C) for medium-rare.
- Remove from the oven and let rest for 20 minutes before slicing.
Notes
- Use a meat thermometer for accuracy.
- Let the roast rest to retain juices.
