- 1 prime rib roast (about 6–8 pounds)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Mix garlic, olive oil, salt, pepper, rosemary, and thyme in a bowl.
- Rub the mixture all over the prime rib roast.
- Place the roast in a roasting pan with the bone side down.
- Roast in the oven for 20 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue roasting for 1.5 to 2 hours.
- Check the internal temperature; it should reach 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for 20 minutes before slicing.
