- 1 prime rib roast (about 5–7 pounds)
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Fresh herbs (rosemary, thyme, optional)
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the prime rib with olive oil.
- Season the roast generously with salt, pepper, garlic powder, and onion powder.
- Place the roast on a rack in a roasting pan.
- Roast in the oven for 20 minutes.
- Reduce the temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.
- Remove from the oven and let it rest for 20-30 minutes before slicing.

- Use a meat thermometer for accurate cooking.
- Let the meat rest to retain juices.
