  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Fresh herbs (rosemary, thyme, optional)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rub the prime rib with olive oil.
  3. Season the roast generously with salt, pepper, garlic powder, and onion powder.
  4. Place the roast on a rack in a roasting pan.
  5. Roast in the oven for 20 minutes.
  6. Reduce the temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.
  7. Remove from the oven and let it rest for 20-30 minutes before slicing.
