A nutritious prosperity bowl to celebrate the new year.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff the quinoa with a fork and let it cool.
- In a large bowl, combine black beans, corn, red bell pepper, and cilantro.
- Add the cooled quinoa to the bowl.
- Drizzle with lime juice and season with salt and pepper.
- Toss gently to combine.
- Serve topped with avocado slices.

- Make it ahead of time and store in the fridge.
