Ingredients

- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin spice
- 1/2 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, brown sugar, granulated sugar, melted butter, egg, and vanilla.
- Add oats, flour, baking soda, pumpkin spice, and salt. Stir until combined.
- Fold in chocolate chips.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 12-15 minutes or until edges are golden.
- Let cool before serving.
Notes
- Store in an airtight container.
- These cookies freeze well.
- You can substitute chocolate chips with nuts if desired.
