Delicious pumpkin spice cheesecake bars with a creamy filling and graham cracker crust.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin spice
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a greased baking pan.
- In a large bowl, beat cream cheese until smooth.
- Add pumpkin puree, sugar, eggs, vanilla, pumpkin spice, and salt; mix until combined.
- Pour the cheesecake mixture over the crust.
- Bake for 30-35 minutes until set.
- Let it cool, then refrigerate for at least 2 hours before serving.
Notes
- Store leftovers in the refrigerator.
- Can be topped with whipped cream.
- Use canned pumpkin puree for convenience.
