Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
- In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add pumpkin puree, egg, and vanilla extract to the butter mixture. Mix until well combined.
- Gradually incorporate dry ingredients into the wet mixture. Stir until just combined.
- Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
