Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. Prepare the espresso and let it cool.
  2. In a bowl, mix pumpkin puree, mascarpone, sugar, pumpkin pie spice, and vanilla.
  3. In another bowl, whip heavy cream until stiff peaks form.
  4. Gently fold whipped cream into the pumpkin mixture.
  5. Dip ladyfingers in espresso briefly and layer them in a dish.
  6. Spread half of the pumpkin mixture over the ladyfingers.
  7. Add another layer of dipped ladyfingers.
  8. Top with the remaining pumpkin mixture.
  9. Chill for at least 4 hours or overnight.
  10. Dust with cocoa powder before serving.
