Ingredients

- 1 cup brewed espresso
- 1/2 cup pumpkin puree
- 1/2 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- Prepare the espresso and let it cool.
- In a bowl, mix pumpkin puree, mascarpone, sugar, pumpkin pie spice, and vanilla.
- In another bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the pumpkin mixture.
- Dip ladyfingers in espresso briefly and layer them in a dish.
- Spread half of the pumpkin mixture over the ladyfingers.
- Add another layer of dipped ladyfingers.
- Top with the remaining pumpkin mixture.
- Chill for at least 4 hours or overnight.
- Dust with cocoa powder before serving.

- Adjust sugar based on taste preference.
- Use freshly brewed espresso for best flavor.
- For a stronger coffee flavor, increase the espresso amount.
