A quick and easy ground turkey taco skillet dish that is perfect for weeknight dinners.
Ingredients

- 1 lb ground turkey
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup corn, frozen or canned
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- In a large skillet, cook ground turkey over medium heat until browned.
- Add onion, bell pepper, and garlic; sauté until vegetables are tender.
- Stir in taco seasoning, corn, black beans, and diced tomatoes.
- Simmer for 10 minutes, stirring occasionally.
- Top with shredded cheese and cover until melted.
Notes
- Serve with tortillas or over rice.
- Can substitute ground beef or chicken.
