A hearty quinoa and black bean chili packed with flavor and nutrition.


Ingredients

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a large pot, sauté onion and garlic until soft.
  3. Add bell pepper and cook for another 3 minutes.
  4. Stir in quinoa, black beans, diced tomatoes, vegetable broth, chili powder, and cumin.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy.

Notes

  • Adjust spice level by adding more chili powder.
  • Top with avocado or cilantro for extra flavor.
