Ingredients

- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a large pot, sauté onion and garlic until soft.
- Add bell pepper and cook for another 3 minutes.
- Stir in quinoa, black beans, diced tomatoes, vegetable broth, chili powder, and cumin.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy.
Notes
- Adjust spice level by adding more chili powder.
- Top with avocado or cilantro for extra flavor.
- This chili can be stored in the fridge for up to 5 days.
