- 1 cup quinoa
- 2 cups water
- 1 pound Brussels sprouts, halved
- 1 pound butternut squash, cubed
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 tablespoon chipotle sauce
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse quinoa under cold water and combine with water in a pot.
- Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Toss Brussels sprouts and butternut squash with olive oil, salt, and pepper.
- Spread vegetables on a baking sheet and roast for 25-30 minutes.
- In a small bowl, mix maple syrup and chipotle sauce.
- Once quinoa and vegetables are cooked, combine everything in a bowl.
- Drizzle with maple chipotle sauce and garnish with fresh herbs.
