A colorful and refreshing salad featuring orzo pasta and a variety of vegetables.
Ingredients

- 1 cup orzo pasta
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Cook orzo pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to add other vegetables like zucchini or carrots.
- Can be stored in the refrigerator for up to 3 days.
