A creamy and refreshing raspberry chocolate chunk ice cream.
Ingredients

- 2 cups fresh raspberries
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chunks
Instructions
- In a blender, puree the raspberries until smooth.
- In a bowl, mix the cream, milk, sugar, and vanilla until sugar dissolves.
- Stir in the raspberry puree.
- Chill the mixture in the refrigerator for 1 hour.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- In the last few minutes of churning, add the chocolate chunks.
- Transfer the ice cream to a container and freeze for at least 4 hours before serving.
Notes
- Use ripe raspberries for the best flavor.
- For a smoother texture, strain the raspberry puree to remove seeds.
- Let the ice cream sit at room temperature for a few minutes before scooping.
