Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh raspberries
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour and powdered sugar. Add softened butter and mix until crumbly.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish.
  4. Bake for 15 minutes.
  5. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
  6. Gently fold in the raspberries.
  7. Pour the lemon mixture over the baked crust.
  8. Bake for an additional 20-25 minutes until set.
  9. Let cool completely before cutting into squares.
