Delicious raspberry lemon bars with a buttery crust and tangy filling.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh raspberries
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour and powdered sugar. Add softened butter and mix until crumbly.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake for 15 minutes.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
- Gently fold in the raspberries.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Let cool completely before cutting into squares.
Notes
- Store in the refrigerator for up to 5 days.
- Dust with additional powdered sugar before serving.
- You can substitute frozen raspberries if fresh are not available.
