Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 2 large eggs
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract

- 1/2 teaspoon salt
- 1 teaspoon cocoa powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix oil, buttermilk, eggs, food coloring, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill muffin cups 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let muffins cool before frosting.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add chocolate chips to the batter.
- Frost with cream cheese icing for a classic touch.
