Ingredients

- 1 rib roast (4–6 pounds)
- 2 tablespoons salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Fresh rosemary, chopped
- Fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Mix salt, pepper, garlic, olive oil, rosemary, and thyme in a bowl.
- Rub the mixture all over the rib roast.
- Place the roast on a rack in a roasting pan.
- Roast for 20 minutes at 450°F, then reduce to 325°F (163°C).
- Continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare.
- Let the roast rest for 15-20 minutes before slicing.
